Tortellini with Garlic Sauce

When my boyfriend moved all his stuff into the apartment, he brought with him all his recipe books (because I told him to!) which means that my scope of potential recipes has increased!

Among his recipe collection he had a couple calendars that hard particularly scrumptious food listed for each month. We hung one of them on the fridge and the recipe for May has been tempting us ever since. So, we decided that it was time to make and set out to get the ingredients and start the process.

Once we got around to actually making it, the recipe probably took a total of 10 minutes to make. It was super simple and easy but man, was it ever DELICIOUS! It was so full of flavor and the fresh basil really added a nice touch to the whole thing.

You know how much I love garlic so OBVIOUSLY I loved it. We both gobbled it up so quickly!

Although we went out and bought the tortellini at the grocery store, I was wondering how difficult it would be to MAKE our own tortellini. I feel as though it would be time consuming but it is something I'd love to try. Has anyone ever made homemade tortellini and, if so, do you have a good recipe you'd like to share? :)

Last Month: Garlic Knots

Tortellini with Garlic Sauce
Prep Time: 10mins       Yields 4 servings
Ingredients:
700g fresh tortellini (we used cheese filled, but you could use either cheese or meat filled)
2 gloves garlic, minced
2 tsps Italian seasoning
1/2 cup extra virgin olive oil
4 Tbsps butter
Salt, to taste
Pepper, to taste
Parmesan cheese
Fresh basil leaves

Directions:
1) Boil the tortellini as per the directions on the package.
2) In a saucepan, saute the garlic, and Italian seasoning in the oil, until the garlic is soft. Add the butter and stir continuously for 2 minutes. Remove from heat.
3) When it is finished cooking, drain the tortellini and place into a shallow serving dish. Pour the sauce over the cooked tortellini. Add salt and pepper to taste. Garnish with grated or freshly shredded parmesan and fresh basil leaves.
